How I’m Eating Vegan Once a Week

I know I’ve mentioned that I tried eating vegan in the past, and it simply didn’t work out. I became anemic, and it turns out my body does need meat. However, I’ve committed to going fully vegan once per week. My body feels great, and it’s almost like a reset. I started doing this a couple of weeks ago, and it isn’t as hard as I imagined, mainly because I love the meals I’ve been putting together.

In the morning, I’ll start my day with either a bowl of oatmeal or a smoothie. For lunch, I started doing hummus and avocado wraps, and dinner is either brown rice and a bunch of yummy veggies or Impossible burgers on a bed of lettuce with mushrooms. Also, there are so many delicious vegan restaurants if you don’t feel like making something at home.

It feels like I’m letting my gut take some time to digest and not work so hard. Again, I feel healthier, lighter, refreshed, and all-around better eating less meat, even if it’s only for one day a week.
