The holidays are a time for surrounding yourself with love, but they’re also a time to indulge in some of your favorite and most delicious foods that aren’t always around yearlong. If you’re the cook in your family, you’ll get extra excited about today’s post because we caught up with one of our favorite food bloggers and vegan recipe developers, Remy Morimoto Park aka Veggie Kins! She whips up some of the most Instagram-worthy meals we’ve ever laid our eyes on, and they’re all vegan-friendly and health-conscious, of course. We were dying to know what Remy’s holiday spread would look like this year and she was kind enough to share some of her go-to recipes for you (and us!) to try. And you know we didn’t skip the dessert either! Ahead, some of Remy’s holiday creations.
Holiday Harvest Rice
Inspired by a dish she tried at a Friendsgiving gathering years ago, Remy created her own version of a wild rice dish that couldn’t get her followers to stop asking “What is this rice!?”. The colors alone will get you itching to create this for your holiday spread! The combination of wild rice, quinoa, fresh herbs, mushrooms, apples, and pomegranate seeds literally looks like a holiday in a pot. Like all of Remy’s dishes, this rice medley is vegan, but it’s also refined sugar-free, and gluten-free. Clean, delicious, and full of holiday cheer? We’ll take it.

Sweet Potato Shepherd’s Pie
One dish that always comes to mind around the holidays is, of course, shepherd’s pie. Remy’s spin on the family-favorite meal is savory, full of veggies, and just a tad bit sweet! She opts for white sweet potatoes to give the classic pie a modern twist, and let’s face it, who doesn’t love the decadent taste of sweet potato? You’ll still get that rich and meaty flavor with “beef-flavored” vegetable bouillon and flavor-boosting garnishes like shallots and garlic. Don’t be afraid to really go for the protein with this one—there’s plenty of room for tofu, lentils, or faux meat of your choosing!

LA residents love grabbing a salad from Erewhon market—the most popular being the kale white bean salad which inspired Remy’s next dish. The fan-favorite salad is simple, yet full of flavor and filling thanks to its high-protein content. We don’t know about you, but here at Frenshe we believe that homemade salad dressing always wins, and Remy’s vegan (and nut-free!) dressing will become one of your go-to’s.
